Alpaca Chilli Sauce Louisiana Style
Mild • Fermented • Tangy & Fruity
Crafted with our exclusive Alpaca peppers, grown and fermented on-site in Cape Town.
A Gentle Kick with Big Personality
Alpaca chilli sauce is our take on a classic Louisiana-style hot sauce—only we’ve made it our own. Using our proprietary Alpaca pepper cultivar, this sauce brings a mild heat (around 5,000 Scoville units) with a clean, lingering finish. It’s thin in texture, tangy on the tongue, and fruity in aroma thanks to the gooseberries and white wine vinegar. No sugar added, no preservatives, and absolutely no shortcuts.

How to Use It
Alpaca chilli sauce is the kind of sauce that earns a permanent spot on the kitchen table. Inspired by the classic Louisiana-style tradition and crafted with our own Alpaca peppers, it’s thin, tangy, and fermented to perfection—making it ideal for everyday use, just like Tabasco. But unlike mass-market sauces, Alpaca chilli sauce carries a unique fruity depth thanks to gooseberries and white wine vinegar, giving it a clean finish that lifts rather than masks your food.
Drizzle it over soft scrambled eggs for a gentle morning kick, splash it onto tacos for a bright contrast to smoky meats, or stir it into seafood dishes where acidity and mild heat bring out the natural sweetness. It’s brilliant on pizza and lasagne too—cutting through richness with a refreshing zing—and it’s a quiet hero on cheese boards, especially when paired with creamy or aged varieties.
In the kitchen, Alpaca chilli sauce doubles as a marinade base or cooking ingredient. Add it to stews, soups, or sauces for layered flavour, or use it to deglaze pans with a splash of citrus and heat. It’s shelf-stable, easy to pour, and blends seamlessly into both rustic and refined dishes.
When it comes to drinks, Alpaca chilli sauce pairs beautifully with crisp beers, dry white wines, and citrus-forward cocktails. A dash in a Bloody Mary or Michelada adds complexity without overwhelming the glass.
Whether you’re dressing up a weekday meal, experimenting with new recipes, or adding a splash to your weekend braai, Alpaca brings a touch of brightness and balance. It’s not just a condiment—it’s a quiet flavour companion that plays well with everything and never steals the spotlight.

From Our Garden to Your Table
We’ve always admired the simplicity and punch of Louisiana-style sauces—their thin texture, vinegar-forward tang, and ability to elevate just about any dish. But admiration never meant imitation. At ChilliStuffs, we wanted to honour that tradition while crafting something unmistakably our own. So we went back to the soil.
Instead of sourcing generic chillies, we spent years cultivating and stabilizing our proprietary Alpaca pepper—a mild, fruit-forward variety bred specifically for balance, brightness, and depth. It wasn’t a quick process. Each season brought refinements, each harvest taught us something new. Eventually, we locked in a cultivar that felt like home: gentle in heat, rich in character, and perfect for fermentation.
Grown on-site in Cape Town, our Alpaca peppers are fermented for a full six months using traditional lacto-fermentation. This slow, natural process doesn’t just preserve the chillies—it transforms them. Over time, they develop a complex lactic acid profile that adds tang, enhances aroma, and introduces probiotic potential. It’s a living sauce, full of nuance and vitality.
What you taste in every bottle isn’t just a recipe—it’s a journey. From seed to soil, from fermentation to bottling, Alpaca chilli sauce reflects our belief that good food starts with patience, honesty, and a deep respect for the ingredients. It’s our tribute to Louisiana, told through South African roots and a pepper you won’t find anywhere else.
